Bring the water and sugar to a simmer in a small saucepan over medium heat. Stir until sugar is incorporated fully and let cool to form a syrup
Add fruit into a blender and mix until smooth
Add syrup to blender
Chill mixture in the refridgerator for 1-2 hours
Follow your ice cream maker's directions for sorbet to freeze or place in a freezer-safe container and into a freezer for 4-8 hours, hand-churning every 30 minutes
